For most of us, being stuck at home has meant having to cook a lot more than we’re used to. And since we can’t go get whatever we want at the store, we’ve had to make do with what we can find around the house. There’s still a lot you can make with items that are already in your pantry or fridge, so I asked Zach, our resident chef, to round up a few of his favorites.

BROCCOLI And Egg Fried Rice
One of my favorite meals to throw together is fried rice! It’s super customizable and takes barely any time to make. This recipe calls for broccoli and scallions, but feel free to throw in other veggies you have sitting around. I love to add carrots, peas, and sometimes chopped peanuts.

PASTA Con Ceci
I don’t know about you, but I always have a few boxes of pasta in my pantry ready to go when I need it. This recipe uses tomato paste to make your own sauce and some chickpeas to add protein and fill you up. The best part is it’ll make great leftovers, so make a really big batch and save some for tomorrow!

FIVE-FOLD Challah
Now that you’ve mastered a more savory bread, learn how to make my favorite sweet bread. After you’ve made yourself some challah, slice it up and use it to make french toast. Mmmmm!
Thank you for this inspiration! We are working from home and groceries are limited. Putting waay more time into meal planning, obtaining pickup groceries, and cooking. Can’t wait to try the fried rice recipe with our veg on hand, and the salmon/tomato recipe will be a great surprise for my husband, the salmon-fiend!
You’re so welcome. Thanks for reading. Enjoy the recipes! -B
